我有一位朋友,他長住在國內,很喜歡吃日本料理。他很捨得花錢吃日本料理,要知道在上海、北京吃高級的日本料理,索價不非,他通通都吃過。每次他來香港找我吃飯,我都很傷腦筋究竟要帶他去哪家日本餐廳,事關在香港高級及有名的日餐廳,他都去過。這晚把他和家人帶來位於銅鑼灣一商廈的Sushi Mori,是我常常都會去吃午飯的餐廳。這裡午市時段有個自選壽司套餐,有十件壽司、還有麵食、湯品及咖啡,收費三百多,合理價錢之餘,刺身新鮮,很划算的午餐。這天晚市時段跟朋友來到,我們不多想,選了每位收費$1200的Omakase,即是由廚師發板,吃當天最好的刺身、壽司。廣島蠔已掃上清新的酸汁,濃鮮得宜;帶子非常厚肉,爽嫩甜美;和牛薄切蘸酸汁,入口即化,感覺真美妙;劍魚味道則較清淡。一人獨享的北海道馬糞海膽,原個即開放在我的面前,那一刻覺得好幸福!海膽味鮮帶半分海水味,非常優質。肥美的吞拿魚腩,看到油花如雪花般,不用我說你也應感覺到這份油潤、入口即溶的享受嗎?吃過刺身,再來毛蟹壽司。師傅將毛蟹拆肉,一點調味也沒有放,吃出是毛蟹的清香。赤具壽司爽口新鮮,還有火炙吞拿魚邊壽司,火炙過更突顯吞拿魚的油香。 吃的又豈止以上這麼少,這一晚真的滿足。 continue reading

已經來過好多次,一向都好鐘意中午套餐,今次又黎。一定要坐bar 枱,會見住師傅一件件壽司上,強力推介九件壽司餐,以為吾夠飽?其實餐前有沙律,蒸蛋做前菜,另外特別推介紙薑,不太辣又不太酸。每件壽司都好精緻,新鮮,也有中拖羅,魚子海膽軍鑑係推滿滿的,好新鮮。見圖,最後有鋦蛋,好好食,最後最後有冷或熱喬麥面或烏冬,又或湯,又有咖啡或雪米滋,女仔食其實好飽的。九件壽司餐270,再upgrade 就是自選12件,已經400多,我見隔離都好豐富,不過還是九件最抵食😄 continue reading

A genius chef has the traditional Japanese food handling skills. Sushi are very very fresh, it taste like I m having sushi at a Japan harbour. More over the knife cutting skill are so detail that you can see the hand made evenly cut indent on the sushi. My suggestions: 1. Book early, as it is a crowded restaurant.2. 很久沒去鮨森了,對上一次好像是上年一日滂沱大雨的一天在登龍街避雨,偶然上了這間壽司店選了$600一位的廚師發辦,有十二件壽司先來沙律及蒸蛋金目鯛毛蟹白蝦活赤貝😋銀鱈魚大Toro馬糞海膽這個是三文魚子櫻花蝦飯,有點芝麻很香,櫻花蝦有d口感,好吃最後還有個冷烏冬,很飽很滿足整體壽司質素不錯,新鮮😋 continue reading

趁著好友生日,提議來了一直好想試的Sushi Mori用餐!果然沒有失望,好友更是大加讚賞!每一道菜都有自己的作法及調味,所以不會是從頭到尾的是芥茉跟醬油,讓每道菜有自己的生命,主廚依當日的食材狀況、顧客喜好及預算搭配,創造出獨一無二的無菜單料理!讓客人嚐到最新鮮的食物。先來前菜紫茨沙律和芝蔴豆腐清清味蕾,接著由淡味的白身魚先上切得非常薄身,郤片片均稱,足証師傅有其功架。肉質細嫩,味道鮮美,脂肪量適中好漂亮的刺身擺盤,忍不住給它來張特寫.帆立貝非常鮮美,刺身稔性更高口感豐富,口腔被那股鮮味包圍住久久未散。而角螺則爽口彈牙,味道鮮甜濃郁。非常鮮甜,口感爽脆而且肥大肉厚再配上師傅特調嘅酸汁,味道更升一級,一試難忘。油脂豐富,肉質嫩甜,配以師傅秘製麵豉醬汁,入口完全不覺油膩,只覺肉質鮮美,口感軟潤。深海池魚味道比池魚清爽有彈性,味道清D幸福感滿滿的大拖羅呀,入口即化!在品嚐壽司前,送上師傅親自醃製的新香盛清清味蕾,酸酸地令人感到煥然一新。肉質比較韌有咬口師傅將赤貝取出後,以極快手法調理好,再加一拍,令赤貝神經加緊,肉質更爽脆,上台後還在郁動呢~~鮮度和爽口度都非廉價貨可比就是那種鮮活的甜味,已經是值回票值~毛蟹是這陣子當造的食材,相當鮮甜。蟹肉份量有夠多,加上柔嫩甜美的海膽,更覺豐腴。第一次食銀雪魚刺身,肉質結實但味道甘甜這白蝦壽司入口即融, 蝦肉超甜,嚼了很久都捨不得吞下去咧... XD牡丹蝦不算大,但鮮甜爽口。其油脂豐潤,肉質嫩滑,沒有腥味,入口脂香滿盈,醋香與鯖魚味道平衡。我愛吃經火炙的肥美魚類,輕炙後魚油更甘香,滿咀豐腴。來自北海道的馬糞海膽,鮮香十足,是我最愛的壽司。面前這件海膽軍艦份量十足、紫菜夠香脆。食完好想再encore。大食的我們,最後加上這個,和朋友邊食邊傾,一個夜晚就這樣過去了。最後甜品有水順玄餅,巨峰提子和茉茶紅豆糕,晚餐完滿地落幕。 continue reading
