去完旅行,眼睛大飽眼福,但肚皮空空,返到香港立即搵朋友食餐好的,揀選咗想食好耐既Suzuro,餐廳由樓上舖搬到地舖,但位置都只係得10個,全部吧枱位置,所以要朋友一早訂位先食到~ Dinner Menu ($1880/人) 🌟前菜 先來前菜開胃,一共有四款,包括丹波黑豆、沢蟹、鯛魚昆布漬及和歌山螢光魷魚。最特別是是沢蟹,係季節食材,雖然迷你,但還是很鮮甜,可整隻蟹食用,鹹鹹甜甜的,日本人喜歡用來佐酒。 🌟湯 柚子大蜆清湯,純海鮮的味道,清甜! 蜆非常的大隻厚肉,湯沒有加半點鹽,因為蜆的天然海水味已經足夠調味,再加點柚子的清香便非常鮮味,純海鮮味,新鮮鮮甜。 🌟刺身 這裏的海鮮食材全部由日本到港,每日新鮮到運,不時不食,每款都新鮮好味 🔺鯛魚 來自日本四國愛媛縣的鮮鯛魚,味道清甜,口感結實,可以加埋醋橘,配埋個酸汁,帶出魚的鮮甜味道~ 🔺白蝦 來自富山縣的白蝦,細細隻,但甜味滿分,只需醮少許醬油就可以,一啖十幾隻入口,非常鮮甜 🔺縞鰺 來自熊本天草的縞縿,是天草的名物,口感清爽順滑,肉質結實,味道清雅帶點淡淡魚油香 🔺素揚白蝦 食咗一輪刺身,師傅特別安排一道素揚白蝦,讓我地轉一轉口味。炸白蝦,香脆不油膩,只簡單的加鹽調味,白蝦炸得香脆好味,佐酒一流 🔺岩手縣赤貝 再來是岩手縣的赤貝,新鮮鮮活,口感清爽鮮甜,只簡單配檸檬及少許靜岡wasabi就已經帶出鮮味😋 🔺水八爪魚刺身 來自北海道的水八爪魚刺身,經師傅去衣處理後,外表精瑩雪白,食落口感同一般的八爪魚完全不同,柔軟好食;而八爪魚的吸盤則爽脆,2種截然不同的口感,師傅附上2款wasabi 配著吃,一款是靜岡wasabi,另一款是醬油漬wasabi,辣度略有不同,但配著吃都很不錯,帶出八爪魚的清甜味道 🔺白見貝 北海道厚岸白見貝,師傅將其厚切成條,方便食用,白見貝味道新鮮海水味,非常鮮味,口感清爽彈牙,可以配wasabi、鹽醬油或檸檬食都可以,簡單便能帶出鮮味。 🌟和食: 吃完一輪刺身後,師傅安排2個和食先再吃壽司。🔺昆布醬油燒鯛魚白子 這個季節白子是鯛魚白子,師傅以昆布醬油煮,再燒,令鯛魚白子的外皮口感較煙郁,但內裏還是軟淋,濃郁又清甜。 🔺白海老真丈 白蝦的第三食,是富山縣的鄉土菜餚,是將富山白蝦變成蝦膠去炸,蝦味更濃郁,而外脆內充滿肉汁,彈牙又好食,非常白出色👍🏻🌟壽司: 🔺金目鯛 壽司先以淡身魚開始,來自熱海的金目鯛,新鮮清甜,是比較淡身的白身魚 🔺伊左木 季節限定,來自長崎的伊左木,白身魚帶點晶瑩的紅色光澤,紅色是魚血的光澤,因為是當造季節,所以魚香豐富,是較有口感的白身魚 🔺平貝 愛知縣的平貝,大大隻平貝,師傅席前即開即手握壽師,清甜彈牙 🔺關鯖 大分縣的關鯖,是季節食材,平時的鯖魚都是熟食,但關鯖是可以刺身食用的鯖魚,第一次食鯖魚刺身,口感順滑,魚味濃郁,美味 🔺槍魷魚 配上紫蘇葉的槍魷魚,味道都好夾,口感煙韌 🔺池魚 用上神奈川的池魚,師傅還加了蔥,魚味非常濃郁 🔺中拖羅 魚味及魚油香恰到好處,食落肥美又甘香 🔺大拖羅 偏體雪白的大拖羅,一睇就知非常肥膄,師傅特別加了點鹽同握,降低油脂感,加強魚味,依舊入口即融,但肥膩感減少,魚味也突出,跟以往的大拖羅確實不同 🔺醬油漬赤身(天身) 然後最尾食赤身,吞拿魚正中間近魚背位的部份,脂肪比例較少,但魚味最濃,口感相對亦較結實,師傅以醬酒清處理,更選用赤身中稀有的部位「天身」,醬油漬過後,赤身的鮮甜味更突出🔺馬冀海膽 選用北海道根室市的馬冀海膽,非常的清甜,一點雜質都沒有,鮮甜味充滿口腔,因為太鮮味,所以忍不住再追加一件,人間美味🌟麵豉湯,加入季節蔬菜及魚肉的麵豉湯,濃郁又鮮甜🌟甜品:赤肉蜜瓜、熱情果芝士餅 用上沖繩的熱情果製作,味道酸甜,口感順滑;而赤肉蜜瓜則非常清甜,比芝士餅更甜!非常完美的一餐! continue reading

今日嚟跑馬地食omakase, Suzuro開業多年,由樓上舖搬到地舖,門面精緻溫馨$1880的omakase, 份量唔小。前菜有四款,有鯛魚漬、魷魚、黑豆同烏魚子,鍾意佢嘅鯛魚漬調味清淡,食到魚本身嘅鮮甜味。蜆湯隻蜆超大,湯頭只用本身海水嘅鹽分已足夠。刺身方面有真羽太、縞鰺、富山灣白蝦、岩手赤貝、北海道白見貝同水八爪魚,師傅show咗成條八爪魚腳比我地睇,好誇張😂😂😂😂刺身全部都好新鮮,自己以醬油wasabi調味就帶到個鮮甜味出嚟,最鍾意白蝦,爽爽地嘅口感。呢度嘅wasabi係磨出嚟嘅,師傅控制每件壽司個辣度控制得幾好,唔會食到標眼水。一路食嘅過程師傅都有同我地分享一啲日本飲食文化,真係長知識👍🏻壽司最鍾意中拖羅,魚味同油脂平衡出色。食omakase熱食都好緊要,呢度嘅海老真丈炸得好好食,小食沙甸魚魚苗都幾特別。最後嘅麵豉湯同甜品調味合適,唔會過鹹過甜,係好好嘅ending continue reading

第一次食omakase ,朋友同我都想試吓,就揀咗一間位於跑馬地嘅餐廳,因為我哋都係港島返工,呢間餐廳仲好難book要一早book,見到個門口幾靚,好有大自然嘅感覺入到去廚師就同我哋講咁啱有兩台客cancel咗 Booking,所以就變咗我同朋友包咗場,佢一個serve我哋兩個,變咗VIP,餐廳最多serve 到10個客首先前菜就係日本過年會食嘅嘢,有魚蛋、蝦、黑豆等好多唔同款好精緻既小食,廚師逐樣介紹俾我哋,又講吓啲日本名,好用心之後有蝦湯,有魚蛋、蘿蔔、紅蘿蔔日本魚嘅刺身-真鯛,啲魚係日本即日空運送來,所以好新鮮,完全唔腥細白蝦肉,好多隻白蝦疊埋一齊,味道好特別,香港好少食到赤貝廚師好細心咁𠝹開雕花,味道鮮甜,爽口有口感水八爪魚刺身有八爪魚肉同超大吸盤,廚師拎隻八爪魚出黎俾我哋睇,超級長,好新鮮,食落爽脆唔韌,好有口感海老真丈蝦加蛋整成蝦餅嘅物體,好有蝦味,唔錯三文魚子超級新鮮,平時食嘅魚子都冇咁彈牙爽口,廚師仲示範掉落地仲識彈起北海道香雙蟹廚師好細心拆晒啲蟹肉蟹膏蟹子出嚟,放滿蟹殼,超級新鮮最後就係壽司,唔同嘅日本魚片配飯,廚師逐一介紹,最常見嘅有帆立貝、魷魚同吞拿魚,其他就係少聽到同食到既日本魚,全部都好新鮮最後仲有個麵豉湯同埋甜品,真係食到超級飽好滿足,廚師好好人好用心咁逐樣壽司食材介紹,分享好多日本文化傳統俾我哋聽,好開心滿足既一晚 continue reading

                                                        甚少食Omakase,但一食就覺得呢間係Omakase既天花板。主要係環境、食物、碗碟、師傅都非常之正。環境給人一種寧靜既感覺,有日本庭園、食物質素非常好,師傅又好健談,完全唔似第一次見,聽佢分享左好多野,因為佢係日本有好多遊歷,介紹食物時非常自然,認識左好多關於日本既野。同時感受到佢好熱愛香港、熱愛工作,好正能量。都係食Omakase先會有機會聽師傅分享到咁多自己既野。佢話餐廳不時變換食材。雖然只係得一個menu,但食物都不時變,客人會有新鮮感。就到新年,前菜係好有新年寓意既食物,最中意就係個金粟。海老湯 有蝦同年糕,仲有雕成花既蔬菜,個蝦好大隻,好鮮甜。呢個蛤蜊相當清甜,汁液來自海水,可以飲埋。炸白蝦,鎮店之寶,聽講呢道菜好受歡迎,白蝦既量多,好彈牙,冇諗過會食到呢味咁特別既菜。握寿司 - 十貫青森帆立貝--入口即化,飯既分量唔多,帆立貝好鮮味。新秋刀金目鯛、赤矢柄、關鯖、中拖羅、大拖羅、醬油漬赤身寒獅 季節限定 日本好common但好少係香港既餐廳見到,好厚身,連埋紫蘇葉食,正。白見貝、佐賀赤貝 可以點鹽亦可跟wasabi soy sauce 好脆好爽口新鮮三文魚子杯 根子配蘿蔔蓉 每粒都好晶瑩剔透,一粒粒係口裡爆開。師傅仲試左用一粒彈比我睇,真係好有彈力。佢話佢地要係海裡繁殖,所以冇咁易爆破。香箱蟹:成隻蟹既蟹肉、蟹膏、蟹子都係晒個shell裡面,可以先食左原味,再把青檸加入醬汁裡。以師傅既經驗,用5分鐘就拆到隻蟹。而我乜都唔洗做就有得食佢拆好左既蟹,超正!真係啖啖肉,又可以mix埋膏北海道根室海膽,份量好多好creamy好甜,大愛呢道菜。真羽太: 連埋紫蘇花及葉食,加埋帶有柚香既青檸汁食,一流既味道!水八爪魚、吸盤配芥末雙拼。食法特別,可以加wasabi去吸盤到,嗆鼻但正! 呢個碟加食物,係一件食得既藝術品。富山白蝦,細細隻,係人手拆,冇食過咁細粒既蝦,好甜。味噌湯 食完所以主食後飲返碗湯,相當暖身 甜品: 水羊羹、福岡草莓以廚師發板黎講,菜式既花款好多,食到好多樣野,樣樣都好好味,好中意。同埋師傅好樂於分享食物同埋生活既知識,從中仲學到做人既態度。我會再黎呀!相信到時menu會有新野食了! continue reading
