很久不見的凱悦軒,今日來係食黃皓勤師傅的新Menu,仲要係食幾好少見做主角嘅黃花魚。蝦乾雞油蒸咸鮮 ,師傅將黃花魚以粗鹽醃數小時,洗淨起肉後加左陳年花雕酒、雞油、大蝦乾,同粉皮蒸完後就即刻諗起大班樓嘅名物,黃花魚肉非常嫩滑,我最愛底層的粉皮,個黃酒香絕對昇華提升了不少。秘製酸辣脆黃魚,最簡單炸過嘅脆魚肉加上了酸辣汁,最令人開胃,唔錯。花膠家燒黃花魚雖然有大大件的花膠同勁大條又厚肉嘅黃花做主角,但佢哋先用五花腩起鑊,個油份浸入原條黃花魚煎至金黃色,加入熬製幾小時的雞湯燜至入味,再加入名貴花膠,雖然天氣熱,但都要叫個湯飲下補一補。唯一一個無特別用上黃花魚嘅蝦湯蟲草花杞子浸時蔬我都覺得好特別,個蝦湯係濃到無朋友,加上蟲草花杞子後個湯更多元化,呢個湯如果加個米粉掛湯真心一流。酸菜黃魚金銀炒飯靈魂直頭來自酸菜魚,炒得粒粒靚嘅炒飯,食落去口感如大千世界,有黃魚有酸菜有蛋白彩椒有金黃瑤柱絲,如果你都喜歡食酸菜魚,唔好諗,一定要試下。呢個都好似係新菜單,叫埋黎打卡,酥皮流沙盞以外都要食多個,黃金流沙球拼肉桂紫薯糖水,個presentation 幾有驚喜,最無想過肉桂同紫薯會可以夾得黎又幾好食。睇完朋友
