Located in the Attitude on Granville, @thepearlhk is a fusion restaurant that infuse seasonal Japanese sashimi into western style. The place also serves drinks with an outdoor terrace. Thought it will be a fried cheese ball but it’s not. Wrapped with wakame, asparagus and fly fish roes in salmon, it’s quite refreshing and gave a nice contrast between the scallop and this as appetizers.

Grilled to blushing pink with confit garlic and roasted aubergine purée, the balance was nice and was only a bit gamey in flavour.

It’s really tender and the sauce was really flavourful with caramelised radish. Sous-vide beef croquette was served on the side and was really crispy.
